EAT THE ITALIAN WAY WITH OUR SUMMER FRESH PANZANELLA SALAD. THE PERFECT SALAD TO FILL EVEN THE HUNGRIEST, THIS IS THE SECOND SALAD IN OUR SUMMERTIME TABLE SERIES CREATED IN THE MR PINCHY KITCHEN FOR YOU TO TRY AND ENJOY AT HOME.
¼ loaf day old good quality sourdough bread
3 cups mixed cherry tomatoes, halved (quartered if large)
1 x red capsicum cut into pieces roughly the same size as the halved tomatoes
1x small brown onion sliced
250g halloumi cut into slices
Handful of green beans, topped
1 cup sliced cucumber
¼ red onion finely sliced
½ cup fresh basil leaves
1/3 cup homemade basil pesto or quality store bought
Rind of ½ a lemon
Juice of 1 lemon
½ cup extra virgin olive oil
White wine vinegar (Splash)
Salt and pepper to taste
STEP 1: Tear the bread into small chunks and arrange on a baking tray, drizzle with olive oil, sprinkle with salt and place into a moderate oven until the bread is crunchy and golden.
STEP 2: Place capsicum and brown onion into a preheated fry pan and saute until just tender- 3-4 minutes- transfer to a large bowl.
STEP 3: Using the same fry pan, place halloumi in a single layer and fry until golden, repeat on opposite side- transfer to the bowl with capsicum and add cucumber, tomatoes, half the basil with a good pinch of salt.
STEP 4: Blanche green beans in boiling salted water until tender and add to capsicum mix.
STEP 5: Remove bread from oven and allow to cool
STEP 6: While the bread is cooling, using a jar make the dressing by adding pesto, rind and juice of the lemon, olive oil, salt and pepper to taste. Shake well.
STEP 7: Add bread to capsicum mix and dress with most of the dressing, reserving a little.
STEP 8: Arrange the salad on your platter, garnish with red onion and the remaining basil leaves then drizzle with the left over dressing. Enjoy!
